Origins

Six highlands, each with its own mill schedule

Indonesia is not one coffee. An Aceh wet-hulled lot and a washed Bali lot behave nothing alike on the roaster, and they do not even share a harvest month. Below is what we hold contracts on, with the altitude band each lot is drawn from.

Calendar

When each origin is actually fresh

Indonesia straddles the equator, so our origins do not share a crop year. Plan arrivals against the main crop; the fly crop covers gaps but runs smaller and less uniform. Shipment typically follows the end of a main crop by six to ten weeks.

Milling

Four processes, one dry mill

Every lot is hulled, density-graded, screen-graded and hand-sorted at our own facility outside Medan — not tendered to a third-party mill. That is what lets us hold a defect count rather than hope for one.

Process 01

Giling basah — wet-hulled

The Sumatran method. Parchment is hulled at roughly 30–35% moisture, then dried as bare bean. It is what produces the blue-green colour, the low acidity and the heavy body roasters buy Sumatra for. We control the hulling moisture window ourselves rather than buying already-hulled asalan.

Process 02

Fully washed

Pulped within eight hours of picking, fermented 18–36 hours depending on ambient temperature, washed clean and dried on raised beds to 11.5%. Used for Toraja, Kintamani and Java Preanger, where the point is clarity rather than body.

Process 03

Honey

Pulped with mucilage left on, dried slowly under shade netting for 12–18 days with regular turning. Gives Bali and Java lots more sweetness and a thicker mouthfeel without the ferment risk of a full natural.

Process 04

Natural

Whole cherry dried on raised beds for 18–25 days, turned hourly through the first week. Limited volumes from Flores and Bali, cupped lot by lot before we offer any of it — we do not sell naturals blind.

Compliance

Traceable to the plot, documented for the border

Every lot carries the collection point, the farmer group, the harvest week and the mill run it came from. For EU buyers we hold GPS polygons for each supplying plot and supply the geolocation dataset your due diligence statement needs — not a blanket declaration, the actual coordinates.

Pre-shipment samples are drawn from the finished lot, not the offer sample, and sealed against the contract. If a landed lot does not match its pre-shipment sample, we settle it.

Sequence

From your enquiry to your warehouse

The order below is fixed — each step depends on the one before it. Typical elapsed times are for spot lots already in our warehouse.

Step 1

Samples

Tell us volume, process and cup profile. We courier 200–350 g offer samples of the closest lots, free for the first set.

3–6 days in transit

Step 2

Contract

You approve a lot against its sample. We issue a sales contract fixing lot number, quantity, quality, Incoterm, port and shipment window.

Same week

Step 3

Milling and pre-shipment

The lot is re-sorted to contract, sealed samples are drawn and sent, and packing is done to your spec.

7–12 days

Step 4

Stuffing and sail

Container stuffed under our supervision, documents released against your L/C or T/T, tracking shared until discharge.

18–25 days to on-board
